Catalan rice ingredients

"Arroz a la catalana" (Catalan rice)


- 4 pieces of chicken

- 4 pieces of rabbit

- 8 pieces of pork cutlet

- 4 sausages

- 4 slices of white sausage

- 100 g of chopped ham

- 16 large clams

- 2 medium squid

- 1 onion

- 1/4 kg of ripe tomatoes

- 1 canned pepper

- 3 cloves of garlic

- 2 bowls of rice

- parsley

- salt

- oil

Catalan rice


In a mud casserole, put oil to cover the bottom.

When the oil is hot, fry the pieces of rabbit, chicken and ribs until golden.

Add the squid cut into rings and the finely chopped onion. Stir well and add the sausage, split into small pieces.

Fry before adding the tomatoes peeled and crushed and washed clams. Add the rice, stir and let it some minutes.

Incorporates then 4 bowls of boiling water. Remove and season.

Cook over high heat for 10 minutes, incorporates a chopped garlic and parsley, and bell pepper into strips. Give about 10 minutes of cooking, removing while it is still a bit soupy. Let stand a few minutes.
